Friday evening I had a dinner paartay at my apartment for my friends Bart and Morgan. They are a super awesome couple and we enjoyed some delicious food, good tunes and refreshing cocktails. For the dinner I decided that I would make a buffet of sorts. For apps I made my homemade potato chips, veggies with yogurt dill dip and baked chickpeas (recipe taken from the great Chocolate Covered Katie). For the main course I offered baked eggplant with a sliced tomato and melted mozzarella cheese, lemon lime quinoa, roasted carrots and beef tacos (for the guys).
Saturday I awoke early to work off some of those homemade potato chips from the night before. On Friday night I was talking with Morgan about how I need to find a new gym. The one that I currently use is the one that my company offers. And I hate it. I had looked up a few different ones that I wanted to check out. Two of the gyms offer joint memberships, which means you can spilt the monthly cost with another person. SCORE! That is super cheap! I told Morgan about this and she was all in. So after I finished up some morning time exercise I grabbed a coffee, met up with her and we headed out to start the search for a gym.
SUCCESS! We found 1 that we both liked. I really wanted a gym that offered classes like Body Pump and Pilate's and we found 1 that did. Yay!
After all that running around I was feeling exhausted so I decided to head home and take a nap. I told some friends that I would meet them out in Decatur for Springfest to benefit the Atlanta Community Food Bank around 5pm. I thought a two hour power nap would do the trick; however, I slept through my alarm and awoke at 5pm. AH! I showered super fast and Philip dashed us over there to meet up with everyone. It was a great time! There was awesome bands playing at Twains and everyone was enjoying the beautiful evening. I had never been to Twains before and I must say that I was super impressed. The bar was large enough that you weren't standing shoulder to shoulder with someone even though it was crowded. They have pool tables, darts and other games to keep you busy while you enjoy some cocktails or nominate some of their food dishes.
Sunday was Mother's Day. Apparently, I was extremely tired again and slept until 11am yesterday morning. Once I was finally awake and functional I called my Mother to have a nice long chat with her. I felt bad that I wasn't able to be there with her on that special day but there was no way to avoid it.
I decided that it was high time to get some new gym shoes/kicking around kicks so I visited the New Balance store. I had my eye on this pair of kicks for a month now but I was shocked when I got to the store and tried them on how uncomfortable they felt on my feet. Harumph!
Luckily, the store manager was amazingly helpful and I walked out of there with a great pair of new kicks that are super comfortable. So much so that almost forgot I had on because they are so lightweight.
After I finished up at the New Balance store and Philip was finished visiting with his Mom for Mother's day we decided to meet at the Farmer's Market and get something for dinner. .
We picked up some homemade Apple Chicken Sausage, tomatoes, red peppers and green peppers. We used some of the left over quinoa from Friday night. We also sauteed some veggies and peppers in a pan on the stove in jerk seasoning and cilantro. It was delicious. At first when I made my plate I didn't think I would be able to eat all of that but my inner fat kid came out and I even licked the plate clean ☺
The rest of Sunday evening was spent watching the Bourne trilogy. I had never seen the second movie so after seeing that evening in the third movie made total sense to me LoL ☺
